Funny you should mention amaranth. I had considered planting it but I know little to nothing about it. Aren't the seeds exceptionally tiny? How much would have to be planted for X amount of flour to be obtained?
You know, after your last PC posts you inspired me to at least get out and pull weeds out of my 'retired' vegetable garden. Then the weather turned inclement and it drizzled...then rained...and is still raining here. But the hard had become like real soil. Mind you I had earlier put gypsum and basalt rock dust and chicken manure in it. I think the monstrous weeds that grew may have been the result of whatever was fed the chickens.
